SARRO'S COCONUT CURRY CHICKEN
Boneless Whole Chicken Breast(s) Coconut Flakes (Unsweetened) Curry Powder Garlic Powder Olive Oil Cooking Spray
Preheat oven to 350 degrees. Coat baking tray with olive oil cooking spray. Rinse chicken breast with cold water before placing it on baking tray. Coat chicken with olive oil cooking spray. Sprinkle chicken with curry powder. (Amount will be determined by your own taste.) Sprinkle chicken with coconut flakes (2 teaspoons per breast). Top with sprinkle of garlic powder. (Amount will be determined by your own taste.) Coat with olive oil cooking spray. Add about an inch of water to cooking tray to keep chicken moist while cooking. (Use this delicious liquid when serving meal.) Cook for about 20 minutes or until chicken is tender and cooked.
Slice chicken breast into thin strips and top with flavorful liquid from tray. One sliced medium size chicken breast makes two servings. Enjoy!
